Vanilla Latte Parfait Shooters
Using Real Fresh® Vanilla Pudding & Real Fresh® Vanilla-Oat Plant-Based Pudding

Ingredients
Yield: 32 4 fl oz parfaits (actual yield depends on serving glass dimensions and type of whipped cream used)
1 #10 can
Real Fresh® Vanilla Pudding
or
Real Fresh® Vanilla-Oat Plant-Based Pudding
1/4 cup or to taste
Instant espresso powder
2 lb as needed
Sponge Cake
2 cups (approx. 1/2 lb)
Whipped Cream or dairy-free substitute
32 ea
Coffee beans
32 ea
Shot glasses, 4 fl oz capacity
Directions
In a large bowl, combine the Real Fresh® Vanilla Pudding with the espresso powder until the powder is completely dissolved and the pudding is a uniform color. Transfer to a piping bag.
Cut the sponge cake into ¼”-thick slices. Cut the slices into pieces that are just small enough to fit inside the shot glasses.
Pipe 2 fl oz pudding into each glass
Place sponge cake on top of pudding
Pipe 1 fl oz of pudding on top of the sponge cake
Pipe 1 Tbsp of whipped cream on top of the cake
Garnish with a coffee bean
