Crispy Lasagna Stack

Using Muy Fresco® Queso Blanco

Ingredients

Yield: 10 stacks

  • 30 ea.

    Wonton wrappers

  • 32 oz.

    Muy Fresco® Queso Blanco

  • 10 oz.

    Scrambled eggs, cooked

  • 10 oz.

    Smoked salmon, sliced

  • ½ oz.

    Everything bagel seasoning

  • 1 oz.

    Salmon roe

  • to season

    Salt & pepper

  • to season

    Chives, chopped

Directions

  1. Pre heat fryer to 350° F.

  2. Prepare all ingredients mise en place.

  3. Transfer Queso Blanco to FIFO bottle and heat to 165° F, keep warm.

  4. Deep fry wontons until crispy, keep warm.

  5. For each individual stack begin stacking wonton, 1 oz. scrambled eggs, wonton, 1 oz. smoked salmon slices, wonton.

  6. Top with liberal amounts of warm Queso Blanco.

  7. Top with salmon roe.

  8. Sprinkle with chives and everything bagel seasoning to garnish.

  9. Serve immediately.
