Crispy Lasagna Stack

10 oz.
Scrambled eggs, cooked
10 oz.
Smoked salmon, sliced
½ oz.
Everything bagel seasoning
1 oz.
Salmon roe
to season
Salt & pepper
to season
Chives, chopped

Pre heat fryer to 350° F.
Prepare all ingredients mise en place.
Transfer Queso Blanco to FIFO bottle and heat to 165° F, keep warm.
Deep fry wontons until crispy, keep warm.
For each individual stack begin stacking wonton, 1 oz. scrambled eggs, wonton, 1 oz. smoked salmon slices, wonton.
Top with liberal amounts of warm Queso Blanco.
Top with salmon roe.
Sprinkle with chives and everything bagel seasoning to garnish.
Serve immediately.
