Carrots (diced)

Onions (diced)

Peppers (diced)

Broccoli (florets)
2-3 oz
Cauliflower (florets)

Plant-based chorizo crumbles
Directions
Pre-Heat oven to 350°F.
Blanch all vegetables in advance.
Combine all ingredients in a mixing bowl.
Transfer to greased casserole dish.
Bake in a water bath until set 30-40 minutes.
