Ingredients

Flour 6 oz
Butter 6 oz
Muy Fresco Nacho Cheese Sauce 32 oz
Flour 2 cups
Eggs 6 ea
Tortilla chips, crushed 6 cups

Directions

  1. In a large sauce pan heat butter over medium heat till melted
  2. Add flour and cook for 2 minutes stirring constantly
  3. Add Nacho Cheese cook for 4-5 more minutes until very thick stirring constantly
  4. Pour into shallow baking dish and cover with plastic wrap refrigerate overnight
  5. Using a ¾ portion scoop form into round croquettes and refrigerate
  6. Prepare standard breading procedure:
  7. Stage 1: flour
  8. Stage 2: egg wash
  9. Stage 3: crushed tortilla chips
  10. Bread all croquettes and refrigerate
  11. Deep fry at 325° F
  12. Drain on blotting cloth
  13. Serve
