Ingredients

For Falafel
Canned chickpeas 1 ¼ cups
Red onion, chopped 1 cup
Minced garlic 2 cloves
Fresh parsley ½ cup
Salt 1 tsp
Cumin 1 tsp
Olive oil 2 tsp
Flour ½ cup
For Israeli Salad
Roma tomatoes 3
Cucumber 1
Red onion 1 cup
Lemon juice ⅛ cup
Olive oil 3 tbsp
Salt 1 tsp
For Sliders
Muy Fresco® Mediterranean Hummus Spread 2 tbsp
Pickled turnips ½ cup
Mini pita breads 3 pitettes

Directions

  1. For falafel: Place chickpeas, onions, garlic, parsley, tomatoes, cumin, salt and flour into food processor and pulse until combined.
  2. Form into ½-inch-thick, 2-inch-round patties.
  3. Heat oil over medium-high heat and pan fry patties.
  4. Remove from pan and drain on paper towels.
  5. For Israeli Salad: Seed tomatoes.
  6. Chop tomatoes, cucumbers, onions and parsley.
  7. Mix with lemon juice, olive oil and salt.
  8. To assemble: Layer hummus, falafel patty, pickled turnip and Israeli salad on pitettes.
  9. Garnish with toothpicks and olives.
  10. Serve with side of tabouli salad.
