Nacho Cheese Croquettes


6 oz Flour
6 oz Butter
32 oz Muy Fresco Nacho Cheese Sauce
2 cups Flour
6 ea Eggs
6 cups Tortilla chips, crushed


  • In a large sauce pan heat butter over medium heat till melted
  • Add flour and cook for 2 minutes stirring constantly
  • Add Nacho Cheese cook for 4-5 more minutes until very thick stirring constantly
  • Pour into shallow baking dish and cover with plastic wrap refrigerate overnight
  • Using a ¾ portion scoop form into round croquettes and refrigerate
  • Prepare standard breading procedure:

?   Stage 1 flour

?   Stage 2 egg wash

?   Stage 3 crushed tortilla chips

?   Bread all croquettes and refrigerate

  • Deep fry at 325° F
  • Drain on blotting cloth
  • Serve
